Chicago-based Aqua Cultured Foods has put its fermented alt-protein tuna on the menu at Mama Delia, also in Chicago, in lieu of the actual fish, the company said in a news release. Mama Delia is a venture of Chef Marcos Campos Sanchez, owner of Bonhomme Hospitality.
